These are a current favourite in the house; a perfect snack after work to tide you over till dinner time, resulting in happy tummies and no abandoned bananas left in the fruit bowl at the end of the week. In fact, we are loving these banana choc chip muffins so much, we are buying extra bananas in our food shop just to satisfy our greed.

I like to think of these as healthy but I won't fool you - the amount of chocolate chips I actually throw into the mix might just tip the scales to call these chocolate chip and banana muffins instead. Needless to say, the banana still come through and tastes lovely, and of course, you can throw in as much (or as little) chocolate as you like.

They take no time at all, only three ripe bananas and a great way to use up ingredients which would otherwise go to waste. I find these easier to make than a banana loaf and they're a great size to take to work with you, too. Find the recipe to the right, and let me know if you give them a try!

3 ripe bananas
60g melted butter
2 cups SR flour
1/2 cup golden caster sugar
1/2 cup milk
2 eggs
100g chocolate chips

Preheat oven to 180 fan
Sieve dry ingredients together, make a well. Whisk wet ingredients and add this and the banana to the dry mix.
Bake for 25-30 minutes
